How to not fail at food

aviI've been having a series of discussions with people the last few days over a very interesting topic (coincidence much?)- the person is either vegan/vegetarian or wants to become so, but this is difficult because they don't know how to cook.
First of all, I'm surprised more parents don't teach their kids to cook. It's something I grew up and took for granted.
Second of all, I've had a stroke of genius: I should teach cooking classes for vegan/vegetarian students!
It would be a perfect job. I cook daily; generally interesting meals, as well as simple quick stuff for breakfasts and whatnot, and I know how to cook using a minimal amount of time, space, and often improvised ingredients. Plus I'm cheap to feed.
... now, if only I had the requisite free time. And a kitchen with enough stoves to teach in. >_> Maybe when I'm done with Netzer; I reckon there's money in it, and it's a good cause xD
