First off, this microwave chocolate cake is incredible, with my simplest variation being to use wholemeal flour, rum instead of vanilla essence, and I tend to crumble a block of dark chocolate rather than buying overpriced chocolate chips.

I have, however, two more drastic variations to share with the world. Both are caffeinated, both are full of AWESOME.

Microwave Maccha (or Mocha) Cake

Cooking time: <10 minutes

Ingredients (Maccha version):
  • 3/4 cups wholemeal flour
  • 1/3 to 1/2 cup brown sugar (depends how sweet you want it; I use just over 1/3 cup)
  • 1.5 tablespoons maccha (Japanese green tea powder)
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/2 cup extra-strong green tea (just steep it until it's a nice dark green colour. If you're using a cheap tea that gets bitter when you steep it for too long, use the full 1/2 cup of sugar)
  • 1/4 cup sunflower seed oil
  • 1/2 tablespoon rice vinegar
  • about 1/3 cup coconut cream OR apple sauce (pureed apple)
Ingredients (Mocha version):
  • 3/4 cups wholemeal flour
  • 1/2 cup brown sugar
  • 1/4 cup powdered sugar
  • 1 tablespoon cocoa
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/2 cup strong black coffee
  • 1/4 cup sunflower seed oil
  • 1/2 tablespoon white wine vinegar or rice vinegar
  • 1/2 cup dark chocolate chips, or smashed-into-small-pieces dark chocolate
Instructions:
  1. Mix the dry ingredients in a large bowl until the mixture is homogenous.
  2. Add the wet ingredients, and mix until the mixture is again homogenous.
  3. Put non-stick (or greased) baking paper around the inside of an appropriately-sized microwave safe container; it should be at least twice the volume of the mixture.

  4. Maccha version:
  5. Pour the mixture into the microwave safe container, microwave on high for 3 minutes.

    Mocha version:
    Pour the mixture into the microwave safe container, microwave on high for 1 minute. Remove, mix again now that the chocolate has partially melted. Microwave on high for another 2 minutes.

  6. Remove, and allow at least 20 minutes for the cake to set.

... and that's it! I ate one in a single sitting once. In fact, I think I'll go finish the one I have in the fridge right now :D
